Makes 1 dozen cookies.
The batter will be very thick.
Ingredients:
- 1 1/4 cup almond flour
- 1/8 tsp baking soda
- a pinch of salt
- 5 tablespoons melted butter
- 3 tablespoons honey
- 2 teaspoons vanilla extract
- 2 tablespoons cocoa powder
- a handful of dried unsweetened coconut
- baking sheet, not greased
- Preheat oven to 350 F.
- Mix almond flour, baking soda, salt in a large bowl.
- Mix butter, honey, vanilla in a small bowl.
- Add wet ingredients to dry ones.
- Scoop out in tablespoon sized balls. Place on baking sheet.
- Sprinkle the tops with coconut.
- Cook for 12-13 minutes.
